Typical dishes of Carnival: the Castagnole


Carnival is approaching so I decided to offer a recipe of my share of typical carnival, my grandmother always prepared for the pleasure of the whole family: the crackers!

The damselfish is a dish typical of Lazio, which is prepared during the Carnival, sweet fried balls covered with powdered sugar, or as I like it, honey! Few ingredients needed to prepare, according to the recipe of his grandmother.

Castagnole Recipe:


4 eggs;
4 tablespoons oil 4 tablespoons anisette
;
4 tablespoons sugar, lemon zest
;
1 packet of yeast;
a pinch of salt;


flour taste Oil for frying and powdered sugar, cinnamon and honey for garnish.

The process is simple to do good crackers. Beat the eggs into a bowl, add in order MistrĂ  or rum if you prefer, oil, sugar and lemon zest and then the yeast with a pinch of salt. You knead adding flour a little at a time until the dough is soft and not too hard, then creating the balls are not very big, say the size of a chestnut, just the "crackers".
